Let's Eat! Cauliflower Crust Pizza
I usually make a pretty healthy pizza with crust made with whole wheat flour, olive oil, yeast, water and honey. But after my indulgent weekend in Kansas City, I’ve decided to cut down on carbs and get my body back to normal.
When I came across this interesting recipe for Cauliflower Crust Pizza, I wasn’t too sure about it. Even as I was making the crust, I didn’t think it was...

Travel Eats: Kansas City
To celebrate two blissful years of dating, the BF and I spent a long weekend in Kansas City!!
KC is a fab mini vacay spot for us Central Nebraskans because it’s a short (5 hour drive) and there are lots of fun things to do!
Before I discuss the fun things we did in KC, I must talk about the food!

I wouldn’t say I made the healthiest choices while in Kansas City....

What to Eat at the Fair
The Nebraska State Fair begins Friday, Aug. 24, which means you will soon be overwhelmed by the fresh aromas of fried foods and farm animals.
Although fried food doesn’t pass my lips that often and I’m not an animal person, I LOVE the state fair!! I love the people watching, I love the Ferris wheel, I love checking out all the 4-H projects and I love the exhibition building where...

How to Select Farmer's Market Produce and Keep it...
Here are some great tips for handling farmer’s market produce from the University of Nebraska Institute of Agriculture and Natural Resources…
LINCOLN - In the spring, summer and fall, farmers markets offer local residents the option of purchasing fresh fruits and vegetables that have been grown nearby, and often by the people selling the produce themselves.
But the high...

Let's Drink! Sangria
All summer, the BF and I have searched for the perfect patio furniture. I had this vision of us sharing meals, having cocktails and sitting under the stars on our deck. Very romantic.
We finally found the perfect set and the BF even bought cute little outdoor lights! But there was still something missing….Sangria!!!!
As a fun surprise, the BF bought a super fab sangria pitcher and...

National Olive Oil Month
Happy National Olive Oil Month!!
If you don’t use olive oil regularly, you are missing out on amazingness.
First, olive oil is good for you! Olive oil contains monounsaturated fatty acids (MUFAs), which are considered to be a healthy fat, according to the Mayo Clinic.

10-Day Pledge: Day 10!!!
I made it through my 10-Day Pledge to eat real foods!
This has been an interesting 10 days. The weekend proved to be the biggest challenge for me. I realized that I tend to indulge more on the weekends and find it harder to resist temptations when I’m around others.
During the week, it was much easier for me to stick to the rules. However, making a commitment to eat only real food...

Happy National S'mores Day!!
Happy National S’Mores Day!!
I’m pretty sure my employer forgot to tell me to take a holiday today. If you haven’t guessed, I LOVE s’mores. They are fun to make, they are ooey gooey and fun to eat and they’re the perfect combo of melty, fluffly and crunchy (the perfect culinary trio).
I’m really happy for s’mores because they are becoming really...

10-Day Pledge: Day 9
This is the first day that I have had major cravings. I would really love to have a Belgian waffle with butter and maple syrup. A slice of pizza with mushrooms, arugula, tomato and fresh mozzarella would also be amazing.
I have been feeling a little irritable the past few days. Everything annoys me. But I’m not convinced it’s the food I have been and haven’t been eating.
Last...

10-Day Pledge: Day 8
I can’t believe I am nearing the end of my 10-Day Pledge to eat non-processed, real foods!
The eighth day went well, pretty easy actually. I taught two spinning classes (one at 5:30 a.m. and one at noon), which was brutal, so I was feeling a little low in the afternoon. I had a Larabar Uber when I got off work and that helped. If you haven’t had Larabars yet, you need to try them!...

Back to School: Healthy Lunches
The first day of school is almost here!!
Although the federal government has implemented new legislation that aims to make school lunches healthier, http://www.huffingtonpost.com/2012/01/25/school-lunches-to-have-mo_0_n_1230749.html the options aren’t amazing. Don’t get me wrong, this legislation is a huge step in the right direction. But I’ve already looked over the school...

10-Day Pledge: Day 7
Such a better day!!
Getting back on track always feels so good.
After I got off work, I went to the farmer’s market and picked up a few things.
I went to the gym and ran 3 miles then I went to the grocery store and got the items the farmers didn’t have.
Now I’m ready to have a healthy week!
I didn’t eat a lot of bananas on Day 7. But eating too many bananas is...

10-Day Pledge: Days 5-6
My 10-Day Pledge took a turn for the worst this weekend and I realized this is a lot harder than I thought.
The first few days went surprisingly well and even seemed easy. Then the weekend hit. As you know, on Day 4 I snuck in a little fried food to experience Caribbean food. Although I didn’t feel guilty in the moment, I did realize that I could have made a better choice and tried the...

10-Day Pledge: Day 4 = little cheat, shhhh!
Full disclosure, I had a little cheat today.
It was for the sake of a food adventure so I thought it acceptable.
There’s a new restaurant, the Caribbean Bar and Grill, in Hastings (where the BF lives) and it just opened this week and I really wanted to try it out. I’ve never had Caribbean food before so I was super excited to try something new.

10-Day Pledge: Day 3 Success!
The third day of my commitment to eat only real food (no processed food) went much better than the second day. Thanks to a little planning, my meals were well-rounded.
I think I was having a protein deficiency because when I woke up all I could think about was eating eggs. So breakfast wasn’t anything interesting. Just plain ol’ eggs.
Looking back, I did eat a whole lot of nut butter...

10-Day Pledge: Day 2 (the fiasco)
My second day of following the 10-Day Pledge was a bit of a fiasco.

Stay Slim During Summer Travel
The BF and I are planning a weekend trip to Kansas City. I’m so excited to get away for a few days!!
But being away from home means eating out A LOT! One of my fave parts of traveling is eating delish foods I wouldn’t normally get at home (I’m soooo excited for some KC barbecue!). But I don’t want to come back from vacation feeling heavy.

10-Day Pledge: Day 1
The first day of the 10-Day Pledge went fairly well!
http://sweet-success.tumblr.com/post/28361036447/10-days-of-real-food
The blog, 100 Days of Real Food, suggests spending a few days preparing for the 10-Day pledge by purging your cupboards and buying produce. I had most of the foods I needed, but I picked up a few groceries - raw cashews, chickpeas, coconut milk, cage-free eggs, apples,...
