Let’s Eat! Blueberry Banana Oatcakes

Oatcakes are quickly becoming my fave breakfast food. They are soooooo much easier to make than pancakes, which makes them a nice weekday breakfast. They are packed with tons of healthy stuff. And they are delicious! Win-Win-Win!

Both options are great. Using banana adds more sweetness. I don’t think the recipes that use banana need a topping like the Cinnamon Oatcakes with Applesauce. But using egg does add protein. Try both!

I added some ground flax for some extra nutrients. Flax contains lots of good Omega-3 fatty acids and is said to help reduce cholesterol.

Blueberry Banana Oatcakes

1 ripe banana, mashed

1/2 cup oats

1 tsp. cinnamon

1 tsp. ground flax

1/2 tsp. vanilla extract

1/4 cup blueberries

Mash the banana. Add all ingredients except blueberries and stir. Gently fold in blueberries. Make 2 pancakes and place in medium pan sprayed with nonstick cooking spray over medium heat. Cook on each side until lightly browned.
