No-Bake Energy Bites

These little no-bake protein bites are super delish!
I’m starting my training for a half-marathon in May. I often rely on protein bars for quick snacks before or after runs. But I hate that many protein bars have lots of processed ingredients. I’ve experimented with making my own protein bars, but haven’t found a recipe I love.
I came across this easy recipe on Pinterest and decided to give it a go. This recipe is super easy. Just throw the ingredients together and form little balls. These are very sweet, which I liked. Other protein bar recipes I’ve tried, tend to be very dense and not sweet enough.
Keep these around for a quick snack before or after a workout.
No-Bake Energy Bites
1 cup oatmeal, uncooked
1/2 cup natural peanut butter
1/3 cup honey
1 cup unsweetened coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips
1 tsp. vanilla
Mix ingredients together. Refrigerate for about 30 minutes, then roll into balls. (I made balls then flattened them a little bit so they look more like coins).
My batch made 26 balls.
