Let’s Eat! Cauliflower Crust Pizza

I usually make a pretty healthy pizza with crust made with whole wheat flour, olive oil, yeast, water and honey. But after my indulgent weekend in Kansas City, I’ve decided to cut down on carbs and get my body back to normal.
When I came across this interesting recipe for Cauliflower Crust Pizza, I wasn’t too sure about it. Even as I was making the crust, I didn’t think it was going to turn out. But I was completely wrong. This pizza is delish!! I’m not going to lie, the crust doesn’t taste exactly like regular pizza crust. But it doesn’t taste like cauliflower either.
The crust is also easy to make (and less messy than making regular pizza dough). The crust has cheese in it, but if you don’t do dairy or follow a Paleo diet, you could experiment with doubling the amount of cauliflower and omitting the cheese.
You can add whatever toppings you like. I used spinach, tomato, feta and mozzarella. Add pizza sauce or pesto if you want to use a sauce. I like to use tomatoes instead of storebought tomato sauce because tomatoes aren’t processed.

Cauliflower Crust Pizza
Serves 2
1 cup cooked, riced cauliflower
1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp. dried oregano
1 garlic clove, minced
olive oil
toppings of your choice - pizza sauce, shredded cheese, veggies, etc.
To rice the cauliflower:
Take 1 large head of fresh cauliflower, remove stems and leaves, and chop the florets into chunks. Add to food processor and pulse until it looks like a grain. Do not over pulse or you will puree the cauliflower. Place the riced cauliflower into a microwave safe bowl and microwave for 8 minutes.
*One large head will produce about 3 cups of riced cauliflower. I just riced enough cauliflower to make one pizza crust, but if you rice an entire head and don’t make pizza crusts immediately, you can store in the refrigerator for up to one week.
To make the pizza crust:
Preheat oven to 450 degrees. Spray a cookie sheet or 9-inch pie plate with olive oil.
In a medium bowl, stir together 1 cup cauliflower, egg and mozzarella. Add oregano and garlic. Stir. Transfer to cookie sheet or pie plate and using a spatula, pat mixture into a 9-inch circle. Spray olive oil on top to help with browning.
Bake at 450 degrees for 15 minutes.
In the meantime, if toppings include veggies like onions or peppers, saute for a few minutes. If using ground beef, ground turkey or chicken, cook.
Remove crust from oven.
Add sauce, toppings and cheese to the crust. Place under the broiler just until cheese is melted, about 3-4 minutes.
