Let’s Eat! Cheddar, Apple and Walnut Salad

As soon as September rolled around I was ready to start making fall recipes. Unfortunately it was still 90 degrees for the first half of the month. But it has finally cooled off and I have already taken advantage of these few cool days by making some yummy fall dishes.

This salad is my absolute favorite. I love the saltiness of the turkey bacon and cheddar combined with the sweetness of apple slices. So perfect.

I used a Mediterranean blend of packaged greens - escarole, radicchio, endive and lettuce. I’ve made this salad with spinach and romaine, but I like the mixed greens best. 

I used a Jonathan apple because that’s what I had. This salad is also delish with a Fuji or Pink Lady, something sweet.

Cheddar, Apple and Walnut Salad

Serves 1

2 cups mixed greens

1 oz. sharp cheddar, cut into small pieces

2 pieces cooked turkey bacon, torn in pieces

1 small apple, cut into small chunks

1 tbsp. chopped walnuts

1 tsp. extra virgin olive oil

1 tsp. red wine vinegar

Combine all ingredients. Enjoy!

*You can add homemade croutons by cutting a piece of whole wheat bread into 1-inch pieces. Place in the same pan in which you cooked your turkey bacon. Stir frequently and be sure not to burn the bread. Cook until golden brown and crispy.
