Let’s Eat! Cinnamon Oatcakes with Applesauce

I made this super easy and yummy recipe for breakfast this morning.
Oatmeal is one of my diet staples. I’ve tried a gazillion oatmeal combos (cinnamon apple, banana cocoa, nutmeg and pear, strawberries and honey, blueberries and strawberries, etc.) and I was super excited to find this recipe in Self Magazine’s August issue. Oatcakes have all the great flavors and benefits of oatmeal, but in a pancake form.
According to Self, the B vitamins in oatmeal trigger production of mood-enhancing serotonin. I should be very oats happy today!
Cinnamon Oatcakes
Serves 2
2 cups rolled oats
4 egg whites
1 tsp. cinnamon
vegetable oil cooking spray
1/2 cup unsweetened applesauce
1/2 cup sliced strawberries
In a bowl, combine first 3 ingredients. Spread evenly in a skillet coated with cooking spray. Cook over medium heat for 10 minutes, flipping once. Enjoy cake topped with applesauce and berries.
*I cut the recipe in half because I was just making breakfast for myself. Halving the recipe still made two oatcakes. When I make this next time I may add honey or sugar to the oatcake to give it a little more sweetness.
